Six Word Saturday



Wow we had an awesome Thanksgiving break. I had to return to work today but Thursday afternoon and most of the day Friday was spent surrounded by family. I love days like those when we all get along and enjoy life.

so my six word statement this week is
What A Wonderful Life I Have

 I love learning all about foods that others enjoy in far away places. I was so intrigued by this video and thought you all might like it as well.

Goodbye To The Other Man My Mother Loved

'My mom was married to my daddy for nearly 30 years. Had my daddy lived longer they would still be together but there was another man that my mom loved as well. My mother would never choose to miss an episode of Dallas. She seemed to nearly have a love / hate relationship with J.R. Ewing. When she was not loving on J.R. then she was star eyed over his on T.V. brother Bobby. But today is a very sad day for mom and every fan of Larry Hagman. Larry passed on at the age of 81.

Amora Coffee

Left Over Turkey Nachos



3 Tbsplime juice
2 Tbspolive oil
1 tspground cumin
1 tspgarlic powder
2 ccooked turkey, coarsely chopped
salt & pepper to taste
1 pkg10 ounce large tortilla chips
1 can(s)16 fluid ounces refried beans
2 cshredded monterey jack cheese
2 c salsasour creamcilantro, fresh

Whisk together lime juice, olive oil, cumin and garlic powder; toss with turkey in a small bowl and season with salt and pepper. Make a layer of tortilla chips to cover the bottom of a large 12 to 14-inch round or oval baking dish.( I used a 9 x 13 pyrex baking dish) Evenly spoon refried beans over chips. Top with turkey and sprinkle with 1 cup shredded cheese. Make another layer of tortilla chips. Spoon half the salsa evenly over chips. Top with remaining cup of cheese. Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble. Serve hot with remaining salsa, sour cream and cilantro, if desired

Young Hands Can Help Out

Did you have your kids help you in the kitchen this year? There are so many things children of any age can do. One of the most memorable events is being able to help my mom and grandma in the kitchen.

2-3 year olds and up
Most toddlers enjoy helping in the kitchen. They are very tactile and love the concept of eating their art project. This age group, however, needs very close adult supervision since their dexterity and motor skills are still developing.
This age group can do the following tasks with minimal assistance: Squeezing lemons or limes, using a plastic juicer, washing produce in the sink, drying produce in a salad spinner; picking fresh herb leaves off stems, ripping them into small pieces; tearing up lettuce, sprinkling dried herbs and salt, using a pepper grinder, kneading dough, scooping potatoes or yams out of the skins, brushing (or “painting”) oil with a pastry brush, using the rolling pin for dough or puff pastry, whisking together vinaigrettes, squeezing water out of thawed spinach, stirring, and mashing.
They will need close supervision to: Grate, peel, chop vegetables and herbs with a knife, and break eggs.
4-5 year olds and up
In this age group, there is a lot of variability in motor skills, independence, and the ability to focus, which means that some kids will continue doing the 2-3 year-old tasks, and others will feel ready to move on to the 6-7 year-old tasks.
6-7 year olds and up
This age group usually has developed fine motor skills so they can take on more detailed work, like using measuring spoons and forming evenly sized patties. They may still need reminders to watch their fingers during grating and peeling.
They also excel at: Dicing and mincing vegetables, grating cheese; peeling raw potatoes, ginger, mangoes and other fruits and vegetables; slicing and scooping out avocados, greasing pans, using a microplane zester, de-seeding tomatoes and roasted peppers, draining and slicing tofu, rinsing grains and beans, forming cookies and patties, pouring liquids into small containers, and garnishing (or “decorating”) dishes.
8-9 year olds and up
There is a wide range of skills in this age group. Some 8 year olds are not mature enough to work at the stove. Others have the focus and diligence of an adult. You’ll have to decide if they should continue with the 6-7 year old tasks or if they are responsible enough to do more.
This group can take on more sophisticated tasks such as: Using a pizza cutter and can opener, scooping batter into muffin cups, scraping down the (unplugged) electric mixer bowl and food processor bowl, putting away leftovers, pounding chicken, proofing yeast, skewering food, slicing bread, and chopping hot chili peppers (latex gloves are a good idea!).
10-12 year olds and up
This age group can usually work independently in the kitchen. Before letting them do grown-up tasks on their own, they should have close adult supervision to assess whether they can follow basic rules such as tucking pan handles, unplugging electrical appliances, and safely using a chef’s knife. Once they pass a few of these “tests,” they can move onto basic tasks at the stove (stirring, making eggs) and oven, or using a chef’s knife, without close adult supervision.

Leftover Turkey Idea : Tortilla Soup




  • 2 cups peanut oil for frying tortilla strips (see note)
  • 4 corn tortillas, cut in half, then sliced crosswise into 1/2-inch strips (see note)
  • Kosher Salt
  • 2 pasilla chilies
  • 2 ancho chilies
  • 2 whole chipotle chilies canned in adobo sauce plus 1 tablespoon sauce
  • 2 quarts low sodium canned or homemade chicken or turkey broth
  • 2 tablespoons vegetable oil
  • 1 large onion, finely diced
  • 1 whole poblano pepper, seeds and stem removed, finely diced
  • 2 cloves garlic, grated on a microplane grater
  • 2 teaspoons ground cumin
  • 1 pound leftover turkey meat, shredded by hand into rough 10-inch pieces
  • sliced scallions, sliced cilantro, diced avocado, diced jalapeño and lime slices for serving

Procedures

  1. 1
    Heat peanut oil to 350°F in a dutch oven or wok over high heat. Add tortilla strips and fry, agitating with a metal spider or slotted spatula until strips are crisp, about 2 minutes. Transfer to a paper towel-lined plate, season with salt, and set aside.
  2. 2
    Combine all chilis in a medium saucepan and add half of the chicken broth. Simmer over medium-high heat until the chilies are completely tender, about 15 minutes. Transfer to a blender or hand blender cup and blend until completely smooth.
  3. 3
    While chilies are simmering, heat vegetable oil in a large saucepan or Dutch oven over high heat until shimmering. Add the onions and poblano pepper and cook, stirring frequently, until softened but not browned, about 2 minutes. Add garlic and cumin and cook, stirring constantly, until fragrant, about 30 seconds. Add remaining chicken broth. Add chili purée from step 2 as soon as it is ready.
  4. 4
    Bring to a boil over high heat, reduce to a simmer, add turkey meat, and cook until flavors have blended, about 5 minutes. Season to taste with salt. Serve hot, passing tortilla strips, scallions, cilantro, avocado, jalapeños, and lime wedges at the table.

Pumpkin Crunch Cake


1 can (15 oz) pumpkin
1 can (12 oz) evaporated milk
3 eggs
1 1/2 cups sugar
1 1/2 tsp cinnamon
1/2 tsp salt
1 box yellow cake mix
1 cup pecans, chopped
1 cup butter, melted
Preheat oven to 350 degrees.  In a large bowl, whisk together pumpkin, evaporated milk, eggs, sugar, cinnamon and salt.  Pour into greased 13×9 baking dish.  Sift cake mix and spread evenly on top of pumpkin mixture. Sprinkle pecans on top of cake mix.  Drizzle melted butter evenly over the top.  Bake for 50-55 minutes or until golden brown.  Serve either warm or chilled.

Pumpkin Cream Cheese Pie








1 refrigerated pie crust
1 cup sugar
3 tablespoons all-purpose flour
1 package (8 oz) plus 1 package (3 oz) cream cheese, softened
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
3 eggs
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 tablespoon milk

Heat oven to 375°F. Place pie crust in 9-inch glass pie plate as directed on package for one-crust filled pie. Bake about 8 minutes or until light golden brown.
In large bowl, beat sugar, flour and cream cheese with electric mixer on low speed until smooth; reserve 1/2 cup in small bowl. Add remaining ingredients except milk to cream cheese mixture. Beat on medium speed, scraping bowl constantly, until smooth. Pour into crust.
Stir milk into reserved cream cheese mixture. Spoon over pumpkin mixture. Cut through cream cheese and pumpkin mixtures with knife in S-shaped curves in one continuous motion for marbled design. Turn pie plate one-fourth turn and repeat.

Cover edge of crust with 2- to 3-inch strip of foil to prevent excessive browning; remove foil for last 15 minutes of baking. Bake 35 to 45 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Cover loosely and refrigerate at least 4 hours before serving. Store covered in refrigerator. Pillsbury recipe

Microwave Tip : Heat or Reheat Dinner Rolls

Now we all know that the microwave normally dries up bread. The other day i wanted to heat dinner rolls up for supper but did not want to use oven (well you know we cant). So my daughter told me to wrap up in toweling and cook about a minute. Low and behold to my suprise they stayed soft and were warm as well. Now theres a trick if you did not know it all ready. Christmas Idea

This will be the box that you put all the left over wrapping in. This helps cut down on the trash and confusion when you are hit with all the excitement of christmas morning.
