Chicken of The Sea Review and Giveaway

Guess who's turning 60 this year? The Chicken of the Sea Mermaid! Wow this does not seem possible because she has been there since I was a little girl and no changes have taken place in  her physical looks Perhaps mermaids hold their beauty forever. I know that another thing that I have enjoyed since I was a little girl is a good tuna sandwich. My mother would fix these when I was little, they were easy enough to fix through my young marriage years and still remain a favorite of mine.

1/2 loaf of French Bread (toasted)
6 leafs of romaine lettuce
1 large can of chunk tuna (packed in olive oil)
1/4 cup of mayo (I prefer real mayo)
2 tbsp. Dijon mustard
2 bunches of green onion (fine chop)
1 small purple onion (fine dice)
1 celery stalk (fine dice)
1/2 cucumber (seeded, quarted and diced)
10 grape tomatoes (halved)
1 small fine diced Granny Smith Apple
2 hard boiled eggs (chopped)
1 small, jalapeno (seeded, maked sure to remove membrane)
1 sprig of dill
1/8 tsp. of cayenne pepper
1/2 tsp. of garlic powder, or 1 garlic clove (crushed)
**eggs are optional
Drain and flake tuna and set aside In a large mixing bowl, combine all ingredientsIt is best to leave the cucumber and tomato out of the mixture until you are ready to serve.Serve between French bread, or open faced

One great thing is that the No Drain Chicken of the Sea makes the first step of this recipe no longer needed. I am not sure about you but I love it when my job as a wife and mom makes it easy. While draining tuna may not seem like such a big job believe me it is. Draining tuna not only can easily make a mess opening the can but also when you drain the water or oil off the tuna.

This Aloha Friday a meme hosted by the blog an island life  and also the night of our first home football game. I love to watch football. Many ask if I have a football player in school and my answer is I did but no longer. My children have all grown older but I still love highschool football. My question is:

Catfish Stew

Catfish Stew


3 slices smoked bacon
1 medium onion, chopped
2 shallots, finely chopped
1 large clove garlic, finely chopped
1/2 teaspoon dried thyme
1 bay leaf
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 1/2 cups water
1 large ripe tomato, peeled, seeded and chopped into 1-inch chunks
1/2 cup thinly sliced carrots
1 cup small new potatoes, scrubbed and halved
3 pounds U.S. Farm-Rasied Catfish fillets, cut into 2- to 3-inch pieces
2 tablespoons finely chopped fresh parsley
3 green onions, thinly sliced
For garnish: Chopped parsley and lemon wedges

1. Cook bacon in a large saucepan until crisp. Drain on paper towels and set aside. Drain off all but 4 tablespoons of bacon fat from the pan. Add onion and shallots and sauté over medium-low heat until translucent. Add garlic, thyme, bay leaf, salt and pepper and cook for 2 minutes. Add water and bring to a boil. Adjust heat to keep stew at a simmer and cook, partially covered, for 45 minutes, stirring occasionally.
2. Add tomato, carrots and potatoes and cook until tender. Add catfish pieces, parsley and green onions and cook, stirring gently, until fish is flakes easily when tested with a fork. Crumble bacon and stir into the stew. Taste and adjust seasoning. Serve garnished with chopped parsley and lemon wedges.

Spicy Cheeseburger Pizza

our family loves hamburgers and pizzas this recipe combines them and creates an awesome supper that the whole family loves

Spicy Cheeseburger Pizza

1/2 lb ground beef, cooked and drained (can be done ahead of time)
1/2 lb (8 ozs) of Velveeta cut into cubes
1 pizza crust 12 inches
1 can RO*TEL diced tomatoes & green chilies
1/4 cup of Hunt's ketchup
1 cup shredded lettuce

Heat oven to 400 degrees Re warm cooked meat in medium skillet and stir in Velveeta cubes, stirring until melted. Mix RO*TEL and Hunt's ketchup and spread into crust. Top with meat mixture. I smeared the crust with ketchup and then covered with meat mixture and topped with fresh tomatoes, onions, and the additional cheddar. Bake for 10 minutes. Remove from oven and top with fresh lettuce.

Cantaloupe and Orange Treats

Try a new flavor of yummy freezer treat for the whole family
 
 
  • 1 cantaloupe , peeled and seeded
  • 1/2 cup sugar
  • 1 1/2 cups fresh orange or tangerine juice
  • 1/2 cup heavy cream
Directions
In a food processor fitted with a knife blade, combine cantaloupe and sugar. Pulse until pureed and sugar is dissolved. Strain pulp through a medium-mesh strainer set over a medium bowl; discard solids. (Alternatively, run cantaloupe through a juicer; add sugar and stir until dissolved.)

Add orange juice to cantaloupe juice. Add cream and stir until combined. Pour into ice pop molds, freezer-safe cups, or paper cups. Freeze about 1 hour.

Remove from freezer and with a small spoon, stir each pop. Insert ice pop sticks about 3/4 of the way into each mold. Freeze at least 4 more hours, or overnight. Unmold and serve at once.

Strawberry Shortcut Cake

I love Paula Deen she is just so down home and reminds me of the cooking that my mother and grandmothers. This recipe was once featured in her magazine and must I share that it was a big hit at our house as well.
 
 
 

Strawberry Shortcut Cake

1 box strawberry cake mix (I used Duncan Hines)

1 3 oz package of strawberry flavored gelatin
3 C sliced fresh strawberries
1/4 C sugar
2 tablespoons Cognac (optional...I didn't use)
1 C heavy cream
1/4 C confectioners' sugar
1 teaspoon vanilla extract

bake cake in 13 X 9 inch pan according to instructions on box. Cool completely.

Invert cake onto platter (I left mine in the glass cake pan).

Mix gelatin according to package. Refrigerate until cool but not hard.

In medium bowl combine strawberries, sugar, and cognac. Let stand for 20 minutes.

Beat cream, confectioners' sugar, and vanilla until stiff peaks form.

Use a straw to poke holes throughout the cake. Slowly pour gelatin over cake. I found it absorbs better after the top of the cake is saturated with a little gelatin liquid.

Spread strawberries in a single layer on top of cake. Spread whipped cream on top of strawberries. Refrigerate for at least 4 hours. I found cake really needed this time to absorb all the gelatin.

Dr pepper Roast

1 Beef Roast
1 Bottle of BBQ Sauce (I used Country Bobs)
1 Can Diet Dr. Pepper (I'm sure you can use regular, we just buy diet, so it's what I had)
Turn the Slow Cooker onto low.
Pour in a little bit of the BBQ sauce to cover the bottom of the slow cooker pot.
Place the roast into the slow cooker and cover with the rest of the BBQ sauce.
Pour in the Diet Dr. Pepper.
Cover and let cook on low for about 4 hours.
(If you want it to be more of a medium, cook the roast less, but if you want it even more well done, cook it a little longer)

Butterfinger Cake

Oh I have loved butterfinger candy bars forever it seems. I thought I might share this super fun vintage butterfinger ad with you all and a great recipe




Butterfinger Cake

1 box yellow cake mix, plus ingredients to make the cake
1 can sweetened condensed milk
1 jar Smucker's caramel ice cream topping
1 (8oz) tub Cool-Whip
4 regular sized Butterfinger candy bars, crushed

Bake cake in a 9x13-inch pan according to direction on the package.

While cake is baking, mix milk and caramel topping until well blended. When the cake is done and while it's still hot, poke holes in it with a fork or straw. Pour milk mixture over the cake. Allow cake to cool completely.

Sprinkle two candy bars over cake. Spread Cool Whip over the top, then sprinkle the remaining candy bars on top. Chill.

Tip: I like to freeze the butterfingers and crush them right in the wrapper.

End of Summer Party Food : Ranch Sausage Stars

Ranch Sausage Stars




1 - Package Original Hidden Valley Ranch Dressing Mix
(prepared according to package directions)
1 - 10 oz package Jimmy Dean or Owens breakfast sausage, browned & drained
1 - 8 oz package Mexican 4 Cheese blend
1/2 - cup green or red bell pepper, chopped (optional)
1 - 12 oz package Wonton wrappers or (Egg rolls wrappers cut into 4ths)

Brown sausage and drain off any grease, set aside. Mix ranch dressing according to package directions. Mix the sausage, prepared dressing, bell pepper (if using) and cheese together and chill for 30 minutes. Preheat the oven to 350 degrees.

Place one wonton wrapper in a lightly greased standard size muffin tin. Bake 5-7 minutes until lightly golden brown. Watch them carefully so they don't get too brown.

Remove from oven and let cool a bit. When cooled add two tablespoon of the sausage mixture. Return to the oven and bake an additional 5-7 minutes until cheese melts. Let cool just a bit and serve.

Recipe yields: approx 48 sausage stars

Bubble Bread

My mother used to make this on fall mornings whenever we had time to enjoy just a bite. It took longer to make than it took to eat let me tell you. When I was a kid we delivered newspapers every afternoon and every sunday morning. The smells when we arrived home on that sunday afternoon to eat a delicious treat like this made everything ok.

1 c milk, scalded
1/2 c shortening
1/2 c sugar
1 t salt
2 pkg yeast
2 beaten eggs
4 1/2 c flour
1/2 c raisins
1 c sugar
1 T cinnamon
1/2 c nuts, finely chopped
1 stick oleo

Mix first 4 in bowl and allow to cool to lukewarm. Crumble yeast into mix Add eggs and flour. Mix to soft dough and add raisins Turn out on floured board and knead til smooth and elastic and not sticky. Place in greased bowl and grease top and cover with wax paper. Let rise to double in bulk. Punch down and let rest 10 minutes.
Mix together 1 c sugar and cinnamon. Melt oleo Make dough in small bowls Roll in oleo then in sugar mix and then in nuts. Place in greased angel food cake pan or bundt pan. Pile on towp of one another. Let rise. Bake 350 degrees til brown. about 25 minutes Remove from pan while warm
